First decide what you want to learn: building websites with a page builder and no code (drag and drop in a visual editor), or developing themes and plugins from scratch.
Each of these paths has its own way of learning.
Before you look for clients, build a good, elegant portfolio. Even if the projects are not real client work, make three or four sample projects that you can show to your first potential client.
No theme is better than all the others. Every theme is built for a certain kind of website, so make sure you choose the right one for your project before you start.
It depends on the features you need. Many plugins do the same job, but each one offers something different.
So read the documentation and the feature list before you choose.
